Winemaker Comment
In this wine, we sought elegance, complexity and the full expression of Casablanca fruit, being the Casablanca valley one of the world’s best for this variety. We maintained our line of work consistent with elaborating the greatest amount of batches of wine. This was obtained not only by segmenting the vineyards but through the diversity of the vinification alternatives that were used as well. This has allowed us to obtain a broad aromatic structure that reflects the terroir and the unique characteristics of wild fermentations.
2010 will be remembered for white wines that are fresh and intense in the nose, characteristic that is clearly reflected in this wine.
Vintage Note
Great aromatic intensity that accents its citrus notes, minerals and superb freshness with additional notes of dried fruits and a hint of toast (typical of wild yeasts). In the mouth it is elegant with an acidity that highlights the palate’s senses. A vivid and lively entrance that leaves a suggestive and lingering sensation at the end.
Fermentation and Aging
The wait for the fruits’ peak moment was rewarded by a smooth harvest without any setbacks. Thanks to the versatility of this variety, we were able to experiment with several alternatives in order to create this wine’s style. In our case, we wanted to let the land speak for itself through the must originating from the very heart of the grapevine. In this way, all the viticultural and oenological work focused on highlighting the wine’s original characteristics which was further complemented by its barrel storage.
Fermentation was initiated at a temperature of 12°C (53°F) and then increased towards the end to 14°C (57°F). The wine was stored for 10 months in French oak barrels.
