Winemaker Comment

This variety is very versatile and allows us to manage the batches with different winemaking concepts. This broadens our scope of work scheme alternatives for this wine which will always be oriented towards preserving the liquid’s link with the edaphologic composition of the land which gave birth to the grapevines’ very first shoots. In this way, patient cultivation and barrel treatment seek to highlight its natural characteristics.

Vintage Note

Intriguing fresh aromas with citrus, mineral and other notes provided by the wild fermentation. A touch of dried fruits subtly rounds out the nose. In the mouth, its acidity makes it vibrant with a softer edge provided by a slightly smoky finish. It lingers on the palate with a seductive and complex sensation which beckons to continue to enjoy this superb wine.

Fermentation and Aging

Harvested at its peak of ripeness, we defined various vinification alternatives for the polygons – harvest blocks – which are the origin of this wine and associated to the concept of 100% in-barrel wild fermentation with an extended batonnage. The wait was compensated by a wonderful, natural freshness and a unique elegance in the nose.

Fermentation was initiated at 12°C (53°F), and increased in the final phase to
14°C (57°F). This wine was stored for 10 months in French oak barrels.
